As hard as it is, we have to face the facts: summer is slowly but surely coming to an end. And with it all the fresh and juicy fruits that are still piling up on supermarket shelves. Where sun-ripened strawberries, raspberries, apricots, pears and co. are just a few weeks away, there will be only apples and imported exotics left.
So go and grab the fruit! Now is the right time to preserve the sweet, sun-drenched fruits from the supermarket or your own garden for the winter. By preserving, canning and pickling we create an endless summer in storage. What used to be a must to survive the winter is now a huge trend! Because the age-old method of preserving fresh food for the future is part of the Slow Food movement and a sustainable eating culture. Conservation prevents the harvest surplus from being thrown away and we don’t have to use overseas fruit in winter. And it’s also a lot of fun!
Jams and marmalades are one of the most beloved methods to preserve fresh fruits! Nothing sweetens a grey winter morning as much as a bread roll with a dash of homemade strawberry jam. It tastes delicious and reminds us of summer. So the fruits of summer become the treasures of winter.
Whole fruits, pickled vegetables, sauces and even refined chutneys can, of course, be preserved in a jar, as well. There are hardly any limits to creativity. And food blogs, books and cooking magazines are full of simple to ambitious recipe ideas.
By the way, the self-filled jars are also an excellent gift!
